One important thing to remember is something called soft caps. These effect just how much leveling a stats does to improve you, slowly lessening the effect each level. So basically it's diminishing returns.
Any stat can be increased up to a level of 99. Increasing any stat will also increase the players Physical Defense, as well as the Magic, Flame and Lightning Defense. At around level 80 the player won't get increases in all defense stats, rather just a few of the defense stats each level (i.e. physical defense one level, and the next level flame and magic defense).

VItality: Max health points up Very useful for all builds.
Endurance: Your ability to equip, and move in heavy gear, as well as your stamina. Very useful for tanking builds, especially with shields.
Strength: Your ability to wield heavier weapons, and damage with them. Very useful for heavy weapons.
Dexterity: Your ability to use, faster weapons, and your damage with them. Also lets you cast spells faster. Is useful for speedster builds.
Attunement: Your number of spell slots. Required for magician builds.
Faith: Your power with miracles Useful for priest, or paladin builds.
Intelligence: Your power with spells. Required for mage builds.
Resistance: Often considered a useless stat, it improves your poisin, and bleed resist. Not very useful in the long run. Often made fun of as the worthless stat.
Soul Level (SL): Your general level, goes up as you level an atribute. Improves, all defences.
Humanity: Your count of liquid humanity. increases your defence, as you get more of it.
